  • 3 cloves fresh garlic, minced
  • 4 green onions, sliced thin
  • 2 bell peppers (red or yellow), diced
  • 2 cups cooked white or brown rice
  • 3 tbsp Sriracha sauce (adjust for spice)
  • 1/2 cup mayonnaise (regular or light)
  • 3 tbsp low-sodium soy sauce

Instructions

  1. 1. Slice the chicken breasts into bite-sized pieces. Dice the bell peppers, chop green onions, and mince garlic.
  2. 2. In a large skillet over medium-high heat, add a splash of oil. Cook the chicken pieces for 6-8 minutes until golden brown and cooked through.
  3. 3. In a mixing bowl, combine mayonnaise, Sriracha sauce, and soy sauce. Mix until smooth.
  4. 4. Once the chicken is done cooking, reduce heat to low. Pour in the sauce and toss until well coated; simmer for 2-3 minutes.
