  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup sour cream (for drizzling)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1 cup diced ripe tomatoes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a bundt pan with nonstick cooking spray.
  3. Layer tortilla chips around the base and sides of the bundt pan, filling any gaps.
  4. Sprinkle half of the cheddar and Monterey Jack cheeses over the chips, followed by black beans and jalapeños. Repeat with another layer of chips and the remaining toppings.
  5. Bake in the preheated oven for 15-20 minutes until cheese is bubbly and melted.
  6. Carefully invert the bundt pan onto a serving platter. Drizzle sour cream on top and garnish with diced tomatoes and chopped cilantro before serving.
