  • 1 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped

  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, celery, and garlic until softened (about 5 minutes).

  4. Return chicken to the pot; bring to a boil. Reduce heat and simmer uncovered for about 30 minutes or until barley is tender.
  5. Shred the chicken using two forks; mix back into the soup. Season with salt and pepper.
