  • 3 lb chuck roast
  • 4 medium yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 6 oz sliced Gruyère cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C). Season the chuck roast with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned (about 4-5 minutes per side). Remove from pot.
  3. In the same pot, add sliced onions and cook over medium heat until caramelized (15-20 minutes).
  4. Return the roast to the pot, add beef broth until half covers the meat, and add thyme and bay leaves.
  5. Cover and bake for about 3 hours or until fork-tender. Check liquid levels periodically.
  6. Remove from oven, preheat broiler, top with Gruyère cheese, and broil for 2-3 minutes until melted and bubbly.
  7. Serve hot, spooning onion sauce over each portion.
