  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth

  • Freshly ground black pepper to taste

Instructions

  1. Chop the carrots, celery, onion, and garlic into small pieces.
  2. In a large pot over medium heat, heat 1 tbsp olive oil. Sauté onions and garlic until fragrant (2 minutes). Add carrots and celery; cook for another 5 minutes until softened.
  3. Add the chicken breasts and pour in the broth. Bring to a boil then reduce heat to simmer for about 20 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot, shred it using two forks, and return it to the pot along with thyme and black pepper.
  5. Simmer on low for an additional 10 minutes to meld flavors. Serve warm.
