  • 1 cup fresh bell peppers (mixed colors), chopped
  • 1 cup corn (fresh or frozen)

  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil (extra virgin)
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook orzo in salted boiling water according to package directions until al dente. Drain and rinse under cold water.
  2. While orzo cooks, chop bell peppers, red onion, cilantro, and cut corn off the cob if using fresh.
  3. In a separate bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper to create the dressing.
  4. Combine cooked orzo with chopped vegetables in a large bowl. Pour dressing over and toss gently until coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
