  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 8 oz fresh mushrooms (cremini or shiitake), sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear. In a large pot, combine rinsed rice with vegetable broth. Bring to a boil, reduce heat to low, cover, and cook for 45-50 minutes until tender.
  2. In another pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. Stir in mushrooms and garlic; cook for an additional 5 minutes until mushrooms are browned.
  4. Combine cooked wild rice and its broth with the sautéed vegetables. Add thyme and season with salt and pepper.
  5. Simmer on low heat for about 10 minutes to meld flavors.
  6. Stir in lemon juice before serving hot with crusty bread.
