  • 2 lbs beef chuck roast, trimmed and cut into bite-sized pieces
  • 2 cups fresh apple cider
  • 3 medium carrots, diced
  • 1 large yellow onion, diced
  • 2 stalks celery, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 4 medium potatoes, peeled and quartered
  • 4 tbsp butter (for mashed potatoes)
  • ½ cup heavy cream (for mashed potatoes)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Prepare the Ingredients: Chop beef roast, onions, carrots, and celery into small pieces.
  2. 2. Sear the Meat: Heat olive oil in a large pot over medium-high heat. Sear beef pieces until browned (3-4 minutes per batch). Remove from pot.
  3. 3. Sauté Vegetables: In the same pot, add onions, carrots, and celery; sauté until softened (5-7 minutes).
  4. 4. Combine Ingredients: Return beef to pot; add apple cider, thyme, rosemary, salt, and pepper. Scrape brown bits from the bottom and bring to a simmer.
  5. 5. Simmer: Cover and reduce heat to low; let simmer for about 2 hours or until beef is tender.
  6. 6. Prepare Mashed Potatoes: Boil quartered potatoes in salted water until fork-tender. Drain and mash with butter and cream until smooth.
