  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh apple cider
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 cups root vegetables (carrots and potatoes), chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a small bowl, mix apple cider, balsamic vinegar, minced garlic, thyme, and brown sugar until well combined.
  4. Place seasoned chicken in the baking dish, pour sauce over it, and scatter onions and root vegetables around.
  5. Bake uncovered for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Serve warm with sauce drizzled over the top.
