  • 1 lb boneless, skinless chicken thighs
  • 2 medium carrots, diced
  • 2 medium Yukon Gold potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping vegetables and mincing garlic.
  2. Set your Instant Pot to 'Sauté' mode. Add olive oil and sear chicken thighs for about 5 minutes until golden brown; remove and set aside.
  3. Add onions and garlic to the pot. Sauté for about 3 minutes until fragrant.
  4. Return chicken to the pot along with carrots and potatoes. Pour in chicken broth and season with thyme, salt, and pepper.
  5. Close the lid securely. Select 'Manual' or 'Pressure Cook' at high pressure for 10 minutes. Allow natural release for 10 minutes before manually releasing any remaining pressure.
  6. Remove bay leaves before serving; ladle into bowls and enjoy!
