  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • 8 oz cream cheese, softened
  • Fresh cilantro for garnish

Instructions

  1. Place boneless chicken breasts at the bottom of the crockpot. Add chopped onions and minced garlic on top.
  2. Pour in fire-roasted diced tomatoes with juices and add drained beans for added texture.
  3. Sprinkle cumin, chili powder, paprika, salt, and pepper. Pour in chicken broth until ingredients are submerged.
  4. Cover and cook on low for 6-8 hours or high for 3 hours until chicken is tender.
  5. Remove chicken breasts and shred them using two forks before returning to the pot.
  6. Stir in softened cream cheese until fully combined and creamy. Garnish with fresh cilantro before serving.
