  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz cream cheese (full-fat recommended)
  • 8 flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 2 cups enchilada sauce (store-bought or homemade)
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, cook the chicken for about 6-7 minutes per side until fully cooked. Let it rest before shredding.
  3. In a bowl, mix shredded chicken with cream cheese, half of the cheddar and Monterey Jack cheeses, sour cream, salt, and pepper until combined.
  4. Fill each tortilla with the mixture, roll tightly, and place seam-side down in the baking dish.
  5. Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheeses.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until bubbly.
