  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season the chicken breasts with Cajun seasoning and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and cut into bite-sized pieces.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  4. Pour in heavy cream; bring to a simmer. Stir in mozzarella cheese until melted and smooth. Season with salt and pepper.
  5. Add cooked rotini and chicken back into the skillet; toss to coat everything in the sauce.
