  • 2 tbsp olive oil
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 8 oz pasta (penne or fusilli)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned and fully cooked (about 6-8 minutes). Remove from skillet and set aside.
