  • 1 tablespoon olive oil
  • 8 ounces Italian sausage (mild or spicy)
  • 2 cloves garlic, minced
  • 1 cup canned pumpkin puree (100% pure)
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and finely chop the garlic. Wash and dry the spinach if using fresh.
  2. Heat olive oil in a large skillet over medium heat. Add crumbled Italian sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic until fragrant, approximately 1 minute.
  4. Stir in pumpkin puree and heavy cream. Simmer for about 5 minutes until slightly thickened.
  5. Add spinach to the mixture and stir until wilted, about 2 minutes.
  6. Cook gnocchi according to package instructions in boiling salted water, then drain and add to the sauce. Toss gently to coat.
  7. Serve hot, garnished with grated Parmesan cheese.
