  • 12 oz tortellini (fresh or frozen)
  • 1 lb Italian sausage (mild or spicy)
  • 4 cups kale (chopped)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (freshly grated)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, sauté the olive oil and Italian sausage until browned (5-7 minutes). Remove from skillet.
  3. Add minced garlic to the skillet; cook for 1 minute. Stir in chopped kale until wilted (3-4 minutes).
  4. In a separate saucepan, melt butter over medium heat. Add heavy cream while stirring continuously. Gradually mix in Parmesan cheese until smooth.
  5. Combine cooked tortellini with the sausage and kale in the skillet. Pour the Alfredo sauce over everything; toss gently until coated.
  6. Serve hot, garnished with extra Parmesan if desired.
