  • 2 medium sweet potatoes (about 400g)
  • 1 cup red lentils (200g)
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and dice the sweet potatoes into small cubes. In a bowl, toss them with olive oil, cumin, paprika, salt, and pepper until well coated.
  3. Spread the seasoned sweet potatoes on the baking sheet and roast for 25-30 minutes or until golden brown and crispy.
  4. Rinse the red lentils under cold water, then cook in a saucepan with 2 cups of water over medium heat for about 15-20 minutes until tender.
  5. Combine roasted sweet potatoes with cooked lentils in a large bowl, stir gently to mix.
  6. Serve warm, garnished with fresh cilantro.
