  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp honey
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds (raw or roasted)
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed butternut squash with olive oil, salt, and pepper until evenly coated.
  3. Spread the squash on the baking sheet in a single layer and roast for 25–30 minutes until tender and golden brown, flipping halfway through.
  4. Drizzle honey over the roasted squash, sprinkle cranberries and pumpkin seeds on top, and return to the oven for an additional 5–10 minutes.
  5. Remove from the oven, top with crumbled feta cheese, and serve warm.
