  • 12 large pasta shells
  • 1 lb lean ground beef
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 2 cups fresh spinach (chopped)
  • 2 cups marinara sauce (thick and chunky)
  • 1 tsp Italian seasoning
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. In a bowl, mix cooked beef with ricotta, half of the mozzarella, spinach, Italian seasoning, salt, and pepper.
  4. Fill each pasta shell with the beef mixture and place in a baking dish with marinara sauce at the bottom.
  5. Pour remaining marinara over stuffed shells and sprinkle with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
