  • 9 lasagna noodles
  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 2 cups fresh spinach, rinsed
  • 1 cup ricotta cheese (whole milk)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the noodles: Boil lasagna noodles according to package instructions until al dente. Drain and lay flat.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (6-7 minutes per side). Shred.
  3. Make the filling: In a bowl, combine shredded chicken, spinach, ricotta, half of the mozzarella, and half of the Parmesan.
  4. Assemble the rolls: Spread Alfredo sauce in a baking dish. Place a generous amount of filling on one end of each noodle; roll tightly and place seam-side down in the dish.
  5. Add sauce and cheese: Pour remaining Alfredo sauce over rolls and sprinkle with remaining mozzarella and Parmesan.
  6. Bake: Preheat oven to 375°F (190°C). Cover with foil and bake for 25 minutes; uncover and bake for an additional 10-15 minutes until golden.
