  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp taco seasoning
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 cup crushed tortilla chips
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place in the baking dish. Bake for 25-30 minutes until cooked through. Cool slightly and shred.
  3. In a bowl, mix shredded chicken with taco seasoning, black beans, corn, and diced tomatoes.
  4. Layer half of the mixture in the baking dish; add half of the cheese on top. Repeat layers.
  5. Cover with foil and bake for an additional 20 minutes; uncover during the last 5 minutes to brown the cheese.
