  • 1/2 cup canned pumpkin puree
  • 1/2 cup mayonnaise
  • 1/4 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Place six large eggs in a saucepan with water. Bring to a boil over medium-high heat. Cover and remove from heat; let sit for 12 minutes.
  2. Transfer eggs to an ice bath for five minutes before peeling.
  3. Slice peeled eggs in half lengthwise, removing yolks into a bowl. Mash yolks until crumbly.
  4. Add pumpkin puree, mayonnaise, cinnamon, salt, and pepper to the mashed yolks; mix until smooth.
  5. Spoon or pipe the mixture back into each egg white.
  6. Top with chopped parsley before serving.
