  • 1 pound gnocchi (fresh or frozen)
  • 1 cup ricotta cheese (whole milk)
  • 1 cup shredded mozzarella cheese (part-skim)
  • ½ cup freshly grated Parmesan cheese
  • 6 fresh sage leaves (finely chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a bowl, mix pumpkin puree, ricotta cheese, chopped sage, salt, and pepper until smooth.
  3. Fold gnocchi into the pumpkin mixture until evenly coated.
  4. Layer half the gnocchi mixture in the baking dish, sprinkle with half the mozzarella and Parmesan. Repeat with remaining mixture and cheese on top.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
