  • 6 cups low-sodium vegetable broth
  • 2 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Prepare the Vegetables: Wash and chop the cabbage into bite-sized pieces, slice carrots thinly, dice celery and onions, and mince garlic.
  2. Sauté Onions and Garlic: Heat a splash of olive oil in a large pot over medium heat. Add diced onions and sauté until translucent. Stir in minced garlic for an additional minute.
  3. Combine Vegetables: Add chopped cabbage, sliced carrots, and diced celery to the pot. Cook for about 5 minutes until slightly softened.
