  • 4 small sugar pumpkins (46 inches tall)
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup cooked and crumbled Italian sausage
  • 1/2 cup diced bell peppers (mix of red and green)
  • 1/2 cup finely chopped onion
  • 1/4 cup sliced olives (black or green)
  • 1/4 cup chopped fresh basil (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Slice the tops off the pumpkins and scoop out seeds.
  2. In a skillet over medium heat, brown the sausage. Add onions and bell peppers; cook until soft. Stir in pizza sauce and simmer for 5 minutes.
  3. Fill each pumpkin with the sausage mixture, packing it down gently. Top with mozzarella cheese and olives.
  4. Place pumpkins in a baking dish with water at the bottom for steam. Cover loosely with foil and bake for 30-35 minutes until tender.
  5. Garnish with fresh basil before serving.
