  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 cups fresh spinach
  • 1 cup freshly grated Parmesan cheese
  • 1 cup long grain rice
  • 1 cup heavy cream
  • 2 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until internal temperature reaches 165°F (74°C). Remove and set aside.
  2. In the same skillet, sauté minced garlic for 1 minute until fragrant.
  3. Add spinach and stir until wilted (about 2 minutes).
  4. In a separate pot, combine rice and chicken broth; bring to a boil, then reduce heat to low and cover for about 15-18 minutes until liquid is absorbed. Fluff with a fork.
  5. Stir heavy cream and grated Parmesan into the rice along with the sautéed garlic and spinach mixture until creamy.
  6. Slice the cooked chicken and serve atop the creamy rice, drizzling any remaining sauce over the top.
