  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchini, sliced into rounds
  • 1 pint cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add chicken breasts to the marinade and toss until fully coated. Let marinate for at least 15 minutes.
  4. While the chicken marinates, slice the zucchini and halve the cherry tomatoes in a separate bowl.
  5. Place the marinated chicken on one side of the baking sheet and scatter zucchini rounds and cherry tomatoes on the other side. Drizzle any remaining marinade over the vegetables.
  6. Roast in the preheated oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
