  • 1 medium zucchini, diced
  • 1 bell pepper (red or yellow), chopped
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 cups spinach or kale
  • 2 tsp dried oregano

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until translucent.
  2. Add carrots, zucchini, and bell pepper; cook for about five minutes until softened.
