  • 1 cup dried pinto beans (soaked overnight)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups canned diced tomatoes (no salt added)
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Soak the dried pinto beans overnight in water.
  2. In a large pot over medium heat, add olive oil and sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in diced bell peppers and soaked pinto beans. Pour in canned tomatoes with their juices.
  4. Season with chili powder, cumin, salt, and pepper; mix well.
