  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 tsp espresso powder
  • ¼ cup cocoa powder
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed cookies with melted butter; press into the bottom of a springform pan. Bake for 10 minutes and cool.
  2. In a bowl, beat cream cheese and sugar until smooth. Add sour cream, espresso powder, cocoa powder, and vanilla; mix until combined.
  3. Whip heavy cream to soft peaks and gently fold into the cream cheese mixture.
  4. Pour filling over the cooled crust and smooth the top. Bake for 50-60 minutes until edges are set but center wobbles slightly.
