Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature

Instructions

  1. Preheat the oven to 325°F (160°C) and lightly grease a springform pan.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl; press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually add peanut butter and sugar until combined, then mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing on low speed until just blended to avoid overmixing.
  5. Pour filling over the crust and bake for 50–60 minutes until set around the edges but slightly jiggly in the center.
  6. Turn off the oven, crack the door open slightly, and let cool for an hour before chilling in the refrigerator for at least four hours.
