  • 34 boneless, skinless chicken breasts (1 lb)
  • 8 oz fettuccine pasta
  • 8 oz Velveeta cheese, cubed
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp black pepper
  • Salt to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat stovetop over medium heat. Bring salted water to a boil in a large pot for fettuccine.
  2. Season chicken breasts with salt and pepper. In a skillet, heat olive oil and sear chicken for about 6-7 minutes on each side until cooked through. Remove from skillet and let rest before slicing.
  3. Cook fettuccine in boiling water according to package instructions until al dente. Drain and set aside.
  4. In the same skillet, lower heat and sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and chicken broth; stir continuously. Add cubed Velveeta and grated Parmesan until melted and smooth.
  5. Return sliced chicken to the skillet along with cooked fettuccine. Toss gently to coat each piece in sauce. Serve warm.
