  • 4 bone-in pork chops (about 1-inch thick)
  • 4 medium Yukon Gold potatoes, thinly sliced (about 2 lbs)
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Thinly slice the Yukon Gold potatoes and keep them in cold water.
  3. In a skillet over medium-high heat, sear the pork chops for about 3-4 minutes on each side until golden. Remove from skillet.
  4. In the same skillet, sauté onions and garlic for about 3 minutes until fragrant. Stir in chicken broth and Dijon mustard; simmer for another minute.
  5. Layer half the potatoes in the baking dish, top with seared pork chops and half the sauce mixture. Add remaining potatoes followed by the rest of the sauce.
  6. Cover tightly with foil and bake for 45 minutes. Remove foil, sprinkle cheese on top, then bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
  7. Allow to rest for 10 minutes before serving.
