  • 1/2 cup rice flour
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 ripe avocado, sliced

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels. Set up three bowls: one with rice flour, another combining mayonnaise and sweet chili sauce, and the third with panko breadcrumbs.
  2. Coat each shrimp by first dipping it in rice flour, then the mayonnaise mixture, and finally rolling it in panko until fully covered.
  3. Preheat the air fryer to 400°F (200°C) for about five minutes.
  4. Arrange shrimp in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through until golden brown and crispy.
  5. Warm tortillas on a skillet for about one minute per side. Assemble the tacos by layering shredded lettuce, crispy shrimp, and sliced avocado on each tortilla.
  6. Drizzle any remaining bang bang sauce over tacos before serving with lime wedges.
