  • 1 cup pure apple cider
  • 2 tbsp Dijon mustard
  • 4 sprigs fresh thyme
  • 3 medium sweet potatoes (about 2 lbs)
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Season the pork loin with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the pork for 3-4 minutes on each side until golden brown.
  3. In a bowl, mix apple cider and Dijon mustard; pour over the seared pork. Add thyme sprigs around the meat.
  4. Transfer the skillet to the oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  5. While baking, peel and chop sweet potatoes into chunks. Boil in salted water until tender (15-20 minutes). Drain and mash with butter, heavy cream, salt, and pepper.
  6. Serve sliced pork alongside creamy mashed sweet potatoes.
