  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tsp olive oil
  • 3 cloves fresh garlic (minced)
  • 1 medium onion (diced)
  • 1 tsp cumin
  • 2 tsp chili powder
  • 8 flour tortillas
  • 2 cups shredded cheese (mix of cheddar and Monterey Jack)
  • 2 cups enchilada sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil. Sauté diced onions and minced garlic until fragrant.
  3. Add the chicken breasts seasoned with salt, pepper, cumin, and chili powder. Cook until fully cooked through.
  4. Shred the cooked chicken using two forks and mix in half of the shredded cheese along with some enchilada sauce.
  5. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour remaining enchilada sauce over assembled enchiladas and top with leftover shredded cheese.
  7. Cover with foil and bake for about 20 minutes; remove foil and bake an additional 10 minutes until cheese is bubbly and golden brown.
