  • 1 medium onion (about 150g), diced
  • 2 large eggs
  • 2 cups shredded sharp cheddar cheese (200g)
  • 1 cup seasoned breadcrumbs (100g)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with nonstick cooking spray or butter.
  2. In a skillet over medium heat, sauté the diced onion until translucent (3-4 minutes). Add zucchini slices and cook until slightly softened.
  3. In a large bowl, combine sautéed zucchini and onion with eggs, shredded cheese, garlic powder, salt, and pepper. Mix well.
