  • 1 cup full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp cornstarch
  • 2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine 1 cup water, 1/2 cup butter, and 1/4 tsp salt; bring to a boil. Stir in flour until a dough forms. Cool slightly.
  2. Add eggs one at a time, mixing until smooth. Pipe small mounds onto parchment-lined baking sheets. Bake for 20-25 minutes until golden; cool on wire racks.
  3. For the filling, whisk together coconut milk, granulated sugar, cornstarch, vanilla, and salt in a saucepan over medium heat until thickened (5-7 minutes). Cool.
  4. Poke holes in cooled puffs; fill with coconut cream using a piping bag.
  5. To make caramel sauce, melt brown sugar and remaining butter in another saucepan over medium-low heat. Gradually add heavy cream; simmer before removing from heat.
  6. Serve filled puffs drizzled with caramel sauce.
