  • Zest of 1 orange
  • 1 cup dried cranberries

  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in orange juice and zest.
  4. Gradually mix dry ingredients into the wet mixture, folding in cranberries until combined.
  5. Pour batter into the prepared loaf pan and bake for 60–70 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
