  • 6 slices thick-cut bacon, chopped
  • 8 oz cream cheese (full-fat)
  • 12 oz penne or rotini pasta
  • 2 cups fresh spinach
  • 1 tsp garlic powder
  • 1 cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and dice chicken breasts into bite-sized pieces.
  2. In a large skillet over medium heat, cook chopped bacon until crispy. Transfer to paper towels to drain, leaving drippings in the pan.
  3. Add diced chicken to the skillet with remaining drippings. Season with salt and pepper, cooking until browned (6-8 minutes).
  4. Reduce heat to low; stir in cream cheese and chicken broth until melted and smooth. Mix in garlic powder and Parmesan cheese.
  5. Cook pasta according to package instructions; drain and add to the skillet with the sauce along with fresh spinach and crispy bacon. Toss until everything is well coated.
