  • 12 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced

Instructions

  1. Season chicken breasts with Cajun seasoning. Heat olive oil in a large skillet over medium heat. Cook the chicken for 6-7 minutes per side until golden brown and fully cooked. Remove from skillet and let rest before slicing.
  2. In a pot of boiling salted water, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In the same skillet, add more olive oil if needed and sauté minced garlic for about 1 minute.
  4. Stir in heavy cream, bringing it to a gentle simmer. Mix in Parmesan cheese until melted and well combined.
  5. Return sliced chicken to the skillet along with drained pasta. Toss everything together, adding reserved pasta water as needed for desired consistency.
