  • 2 tablespoons Cajun seasoning
  • 8 oz fettuccine or penne pasta
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Dice chicken breasts and season with Cajun seasoning.
  2. Cook pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  3. In a skillet, heat olive oil over medium heat. Sauté chicken until golden brown (7-10 minutes); set aside.
  4. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and simmer gently.
  5. Stir in grated Parmesan cheese until melted. Combine cooked pasta and chicken into the sauce, adding reserved pasta water to reach desired consistency.
  6. Fold in shredded mozzarella until melted. Serve hot, garnished with extra Parmesan.
