  • 8 oz fettuccine or penne pasta
  • 12 oz smoked sausage or Andouille, sliced
  • 1 cup heavy cream
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, sauté the sliced sausage until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, add bell peppers and garlic; sauté for 3-4 minutes until tender.
  4. Pour in heavy cream and Cajun seasoning; simmer for about 5 minutes until thickened.
  5. Return the sausage to the skillet, add drained pasta, and mix well. Gradually stir in reserved pasta water for desired consistency.
  6. Serve hot, garnished with parsley if desired.
