  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for spice level)
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Pat the salmon cubes dry with paper towels to remove moisture.
  3. Set up a dredging station with three bowls: one with seasoned flour (salt and pepper), another with whisked eggs, and the third with panko breadcrumbs.
  4. Coat each salmon piece by dipping it first in flour, then in egg, and finally coating it in panko breadcrumbs.
