  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 4 cups fresh spinach leaves
  • 8 oz cream cheese (full-fat recommended)
  • 8 oz pasta (penne or rotini)
  • 2 cups low-sodium chicken broth
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Prepare the ingredients by chopping sun-dried tomatoes and mincing garlic. Rinse fresh spinach and set aside.
  2. Season chicken breasts with salt and pepper in the crock pot. Layer minced garlic and chopped tomatoes on top.
  3. Pour chicken broth over the chicken to create a flavorful base.
