  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup mixed bell peppers, chopped (red, green, yellow)
  • 1 cup salsa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large baking dish.
  2. In a skillet over medium heat, add olive oil. Sauté the chopped bell peppers until slightly softened (about 5 minutes).
  3. Layer seasoned chicken breasts in the baking dish. Top with sautéed peppers, black beans, salsa, and shredded cheese.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  5. Let it rest for a few minutes before serving. Optionally garnish with fresh cilantro or avocado slices.
