  • 12 oz rotini or fusilli pasta
  • 1 cup fresh pineapple chunks
  • 1 cup diced red bell pepper
  • 1 cup diced yellow bell pepper
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped green onions
  • 1 cup diced cooked ham or shredded chicken
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
  2. While pasta cooks, prepare the vegetables: dice bell peppers, slice red onion, and chop green onions.
  3. In a bowl, mix mayonnaise and sweet chili sauce until smooth.
  4. In a large bowl, combine cooled pasta, pineapple, vegetables, ham or chicken, and dressing. Toss gently until evenly coated.
  5. Chill in the refrigerator for at least an hour before serving.
