  • 34 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Mix granulated sugar, brown sugar, melted butter, and eggs into the mashed bananas.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. For the cinnamon swirl, mix additional sugar with cinnamon in a small bowl.
  7. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon mixture on top, add remaining batter, and finish with the rest of the cinnamon mixture. Swirl gently with a knife.
  8. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
