Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1/2 cup pure honey
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a large bowl, mix ground beef, breadcrumbs, minced garlic, egg, salt, and pepper until just combined. Form into small meatballs, about one inch in diameter.
  3. Place meatballs on a parchment-lined baking sheet and bake for about 20 minutes until browned and cooked through.
  4. Meanwhile, cook rice according to package instructions. In a separate bowl, combine honey and soy sauce.
  5. Layer cooked rice in the prepared baking dish. Once meatballs are done, place them on top of the rice and pour the honey garlic sauce over everything. Bake for an additional 15 minutes.
