  • 2 fresh limes (juiced)
  • 3 tablespoons pure honey
  • 2 ripe avocados (mashed)
  • 1 cup cooked white rice (or brown rice for a healthier option)
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons low-sodium soy sauce
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. In a bowl, combine lime juice, honey, soy sauce, minced garlic, and cilantro. Add chicken breasts, seal in a bag or cover in a dish, and refrigerate for at least 30 minutes.
  2. Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard marinade. Grill for about 6-7 minutes per side until cooked through (internal temperature reaches 165°F). Let rest before slicing into strips.
